Ingredients
- 1 cup brown or green lentils
- ¾ cup long-grain rice
- 3 large onions, thinly sliced
- 3 tbsp olive oil
- 1 tsp cumin
- ½ tsp cinnamon
- 1 tsp salt
- 3 cups water or vegetable broth
- Black pepper
Cooking Steps
- Rinse the lentils.
- Simmer lentils in water for about 15–20 minutes until partially tender.
- Drain if necessary.
- Heat olive oil in a large pan and slowly cook the onions until deeply golden and caramelized.
- Remove about half the onions for topping.
- Add rice, lentils, cumin, cinnamon, salt, pepper, and broth/water.
- Cover and simmer until the rice is tender and liquid is absorbed.
- Fluff with a fork and top with caramelized onions.
